The Ancestral Method was born in France in 1531, 150 years before the Champenois method.
We have decided to create a new wine by adopting an ancient method to recover traditions of the past in line with our style of craftsmanship and authenticity. A natural wine with a strong personality, pleasant non-aggressive bubbles that recall the drink. Bouquet of white fruits, apricot, pineapple, passion fruit and almond on the nose with a slight salty note at the end. Unique aromas and scents obtained thanks to our organic white grapes and the long contact with indigenous yeasts during the refermentation in the bottle. A cheerful and fragrant wine that goes brilliantly with aperitifs, appetizers, fish and why not even with pizza.
